What started as a grounded travel career during COVID turned into something entirely unexpected. After 32 years in the airline industry, Darryn found himself planted on Shelter Island, NY—with no flights to catch, but a serious craving for a proper New York bagel.

Growing up on the Lower East Side, he knew what a real bagel should taste like. Not finding one out east, he did what any slightly eccentric New Yorker would do—he started baking them himself. A little grit, a lot of imagination, and suddenly THE ECCENTRIC BAGEL was born.

With his slippers, Einstein hair, and a reputation for thinking a little differently, Darryn leaned all the way into it. What started as a joke became the name—and the philosophy. Bold, playful, and proudly offbeat.
From classic New York roots to wild, inventive flavors, every bagel carries a bit of that eccentric spirit. And then came the chips—loud, crunchy, and impossible to ignore.
